Chocolate Covered Cheesecake bites

I absolutely love making cheesecakes but I wanted to do something different. I found this recipe (chocolate covered cheesecake bite) and it's amazing!! Here is the end result (I added the white chocolate drizzle):






My husband said they are amazing. I sent them to class with him so I hope they are a hit!

Baking and Fireworks

Yesterday I decided to make this fun rainbow layer cake. I am actively trying new recipes and I found this one on Martha Stewarts website. OMG it is sooo delicious, it tastes like a sugar cookie (so you can't eat a lot at once) and it looks pretty:

I will definitely be making this again!


Afterwards Kyle and I headed off to the Veterans Park to watch fireworks. Now we are used to the big event on post at Fort Bragg (can't have events like that on post here because it is so dry) so of course I was expecting to not be impressed. I was SO wrong. The fireworks went on for about 50 minutes and it was amazing!! I took some pictures and am really happy with how they came out:

It was a spectacular show and am so glad we went.


This morning we got up and headed off to the local farmers market. I love being able to support local businesses and farmers. We bought some amazing homemade tortillas ($3 for a dozen) and can't wait to  use them for fajitas tonight. I will be going back next week to buy some tamales. 

Today I am working on another yummy treat. I am making chocolate covered cheesecake bites for Kyle to take to class tomorrow. I can't wait to see how they turn out.

Ready to Rest!

I am back from Disneyland again!!! On Thursday I flew to Vegas so I could go to Disneyland with my sister and niece for 3 days. We had such a blast!! The best part was watching Kylie run around and take pictures with the characters and get their autographs. I am beginning to realize that I could never get sick of going to Disneyland, it is such a magical place and so special! Of course no trip is complete without someone getting hurt haha, I decided it would be fun to trip and twist up my ankle pretty good:

Now it is time to settled in to some normalcy. Kyle started his first school yesterday that will last until the 25th of July, he will then start the CCC which will last until January 3rd. Lately we have been throwing around more options of where we want to go afterwards. Obviously Fort Lewis and Fort Carson are still on the list, but now we have been approached by a good friend (who will be a brigade commander) asking about our feelings of maybe going to Fort Bliss. Our options are open and will see what happens. We should find out around October where we will be headed.

Good Times!

We are back! Kyle and I spent 3 amazing days in California at Disneyland. We decided to go for our anniversary and it was so worth it. I hear so many people that about Disneyworld and I'm sure that it's great but to me nothing compares to the original. Everything about it is completely magical!! I have so many amazing memories from there growing up and it just keeps getting better. Here are a few pictures from our trip:







Now that we are back we will spend the next few days getting the last few boxes unpacked and just relaxing. Kyle will start school on Wednesday and that night I will be on a plane to Vegas!! My sister, niece and I are going to Disneyland!! (Yes I am going back next week haha). 


We are looking forward to exploring Arizona more and making our way to all the different hiking trails as well as Tombstone (it is only about 35 miles east of us). I have a feeling these next 6 months here will be awesome!!!!

Home Sweet Home!

After 2 weeks with family, Kyle and I loaded the animals up and headed to Fort Huachuca! We made it here around noon and signed for our house:




We love it!!!! It is just enough room for us but of course only temporary.

Our household good won't be delivered until Monday but that's ok. It gives us time to explore the area.

I will post a longer update after we get back from Disneyland next weekend.
